Penambahan Tepung Bayam Merah (Amaranthus Gangeticus L.) Pada Pembuatan Brownies Kukus Sumber Zat Besi (Fe)

ABSTRAK
Salah satu permasalahan gizi masyarakat adalah anemia.Saat ini, banyak obat-obatan generik atau suplemen penambah besi (Fe) dengan rasa yang kurang diminati oleh masyarakat terutama ibu hamil.Salah satu solusi untuk mengatasi masalah tersebut adalah membuat suatu produk olahan sumber zat besi (Fe) berbahan dasar tepung, untuk pemanfaatan dari bayam merah yang akan dibuat menjadi tepung. Tujuan dalam penelitian ini adalah untuk mengembangkan dan mengkaji pemanfaatan bayam merah sebagai sumber zat besi (Fe) pada pembuatan brownies.Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan satu faktor yaitu perbandingan tepung terigu dan tepung bayam merah. Terdapat 3 formulasi yaitu F1 = 40%:60%, F2 = 45%:55%, dan F3 = 50%:50%. Produk terpilih dilakukan pengulangan sebanyak dua kali berdasarkan hasil penelitian.Brownies dengan formulasi F1 menjadi produk terpilih dari hasil uji organoleptik dengan nilai rata-rata kesukaan untuk warna 3.7, tekstur 3.8, rasa 3.7, dan aroma 3.5. Hasil uji laboratorium per 100 gram browniesterpilih memiliki kadar air 27.1%, abu 2.08%, protein 6.29%, lemak 21.6%, karbohidrat 42.9%, energi 391 Kkal, dan zat besi (Fe) 7.10 mg.
ABSTRACT
Anemia is one of nutrition problem. Recently, there was medicine or Iron (Fe)supplement with tasteless that doesn’t liked by people, especially pregnant woman. One of solution to solve this problem is making a food product that contents iron with flour ingredient from red spinach that will be made as a flour. The purpose of this study was to develope and to studythe utilization of red spinach as a iron resource on the brownies making process. This study used complete random with one factor treatment 2 repetition. The treatment was ratio between regular flour and red spinach flour. There was 3 formulas, F1 = 40%:60%, F2 = 45%:55%, and F3 = 50%:50%. Brownies with F1 formulation chosen as the best product from organoleptic test with average liking point was 3,7 for color, 3,8 for texture, and 3,5 for flavor. The result of chemistry test for 100 gram brownies has 27,1% of water content, 2,08% of ash content, 6,28% of protein content, 21,6% of fat content, 42,9% of carbohydrate content, energy 391 kkal and iron 7,10 mg.
