Pengembangan rancangan mesin roasting kopi otomatis dengan kapasitas 500 gram
Aldi fadillah
sebelumnya.

ABSTRACT
Development of a design automatic coffee roasting machine with a capacity of 500 grams
Aldi fadillah
The main issue in this research lies in the use of a single-walled drum in conventional coffee
roasting machines, which results in uneven roasting and the risk of over-roasting due to direct
contact between the drum and the heat source. As a solution, a design improvement was carried
out by increasing the drum capacity to 1.2 liters for 500 grams of coffee beans and adding a
protective layer in the form of a drum chamber to maintain temperature stability in the roasting
chamber. The temperature control system uses a microcontroller with an MS6514 thermometer
and a type K thermocouple sensor, allowing accurate temperature and time settings to achieve
light, medium, and dark roast levels. Testing was conducted based on the Indonesian National
Standard (SNI 01-3542-2004) using 500 grams of Liberica coffee beans with three temperature
variations: 180°C, 200°C, and 220°C over a 30-minute duration. The final mass reductions of the
coffee beans after 30 minutes were 412g at 180°C, 395g at 200°C, and 384g at 220°C. The test
results showed that the developed machine could gradually and stably reduce moisture content,
with shrinkage levels of 3.5% for light roast, 8.2% for medium roast, and 14.6% for dark roast.
Meanwhile, with the old machine, the respective shrinkage was 4.8% for light roast, 10.8% for
medium roast, and 19.2% for dark roast. These values are more consistent and lower than previous
machines.
